Description
Casa Lovato balsamic is a handcrafted condiment made from cooked grape must and wine vinegar.
Processing: during the harvest period, the Lovato family harvests grapes from different selected vines. The must obtained is immediately cooked over direct heat in the cauldron, thus avoiding fermentation, and is then rested and decanted into barrels that are gradually becoming smaller and smaller, before being aged in the attic of the Balsameria.
During the winter, it is left to rest and racking into the various barrels, which are gradually reduced in capacity, specially created by master coopers. The ageing phase takes place in the attic of the Balsameria.
Sweet-and-sour taste and aroma with a sweetish flavour typical of ripe red fruits such as cherries, blackberries and raspberries.
